Chapter I lists everything, from ingredients to equipment, the reader will need to prepare any of the recipes in this book. Subesquent chapters include 375 recipes and methodology in thirteen differnt categories. Rasmussen was born in Wausau, Wisconsin in 1954. While studying yoga and Eastern Mysticism, Mark became vegan in 1975. As a chef, Mark worked in traditional restaurants from Hawaii to New Jersey cooking conventional foods with animal products while privately honing his craft of vegan cuisine. Time and circumstances landed Mr. Rasmussen in the real estate business in the 1980’s and off the wagon as a vegetarian. During this period Mark attended college and obtained a degree in electrical engineering. By 1991 Mark became a vegan once more and, united with his third wife Liz, opened the “Veggie Works Vegetarian Restaurant” in Belmar, N.J. in 1994. The continued success of his restaurant together with numerous requests from his customer base, led him to write this book. Mark has three children, two girls Maegan and Temperance, from his first marriage and one boy, Erik, with his third wife.
