I read it cover to cover and was amazed at the stories of these four pioneers in the world of plant-based nutrition for reversing insulin resistance and type 2 diabetes. The truth is that this approach is possible for millions of people with diabetes worldwide, including type 1 diabetics, type 2 diabetics and gestational diabetics. The word must get out about the power that eating a plant-based diet has on minimizing the symptoms of insulin resistance and diabetes.”Sugar” is one of the most misunderstood topics in nutrition today, and as a PhD in the field of Nutritional Biochemistry, I understand first hand how confusing it can be. The truth is that fruit sugar and artificial sugar behave completely differently in the human body, and therefore have completely different metabolic function.
